12 carrots, sliced lengthways
Vegetable oil
Himalayan pink salt (or regular salt)
1 jar Jamaican pepper jelly
Thyme sprigs
Method
Method:
1. Preheat oven to 350F and line a baking tray with foil.
2. Wash and scrub carrots and cut them how you like, whether slices or chunks.
3. Coat carrots with a little oil and season with salt, add to the baking tray and place in the oven for 30-35 minutes.
4. While carrots are roasting, gently melt pepper jelly in a saucepan over medium heat.
5. Midway through roasting, remove carrots from oven and brush all over with the pepper jelly glaze making sure everything is coated and place back into the oven to glaze and continue cooking.
6. Once ready to serve, garnish with fresh thyme leaves.
